IRON SKILLET CORN BREAD

1 cup yellow corn meal
1 cup flour
4 tsp. baking power
1/4 tsp salt
1 egg
1 cup buttermilk
2 Tbsp. canola oil for the skillet


Preheat oven to 425 degrees, put oiled iron or heavy skillet in the oven to preheat also.
Put dry ingredients into large bowl, add egg and buttermilk and mix well.
Carefully pour into hot skillet and bake for 25 minutes.
